This family estate is settled in Chitry on the very north of Burgundy. Olivier took over in 1992 after he left a life in the music industry. He’s producing here both reds and whites on kimmeridgian and portlandian limestone soils similar to those you can find in the famous neighbour of Chablis. Oliver is hard worker and he’s giving his maximum to get the best out of his old vines growing on this underrated terroir.The vines are farmed organically although the domaine is not certified.Olivier is planting natural herbs between vineyard rows to prevent erosion and is using only organic fertilizer in the fields. The soil is ploughed to encourage vine roots to dig deep. The grapes are fermented on indigenous yeasts and an homeopathic dose of sulfur is added at bottling. The whites are mostly aged in stainless steel except in the cuvée Olympe for which most of the wine is raised in barrels. The reds go through 1 year of barrel ageing and 6 months in stainless steel"The wines are of amazing quality for this modest appellation.
