In parallel, Jerome is running a high quality negoce business covering 3 hectares and increasing the range of wines. The vines are farmed according to biodynamic principles although the vineyard is not certified. Jerome never used herbicides or pesticides and plows the soil. He believes in full ripeness and often harvest late in order to reach the perfect moment.
