The 2023 Pouilly-Fuissé "L’Âme Forest" by Domaine Forest is a high-quality Chardonnay that beautifully balances richness and freshness. Eric is a standout winemaker based in Vergisson, managing 4.8 hectares of vines planted between 1930 and 1979. Drawing on the deep knowledge of nature and biodynamics passed down from his grandfather, Eric has embraced a holistic approach to viticulture and winemaking. All grapes are hand-harvested, and the wines are fermented and aged for ten to fifteen months in barriques and demi-muids.
