This small domaine is working on some of the best terroirs of the Côte de Beaune with some very high quality rootstock. Their plot of Pommard Premier Cru la Platière has for example been planted in 1936 and they also own the smallest monopole Premier Cru in Pommard with their Clos Derrière Saint Jean. Thierry is a passionate man and is engaged in sustainable winemaking.
The vineyard is under organic management since 1999 and the vinification is truly traditional and respectful of the terroir.
Grapes are vinified with indigenous yeasts and Thierry and his son take as less action as possible in the cellar. The wines are vinified in tronconic wooden casks before being raised for 18 months (12 for regional wines) in barrels. The percentage of new oak is low. In the whole process only one racking takes place before bottling. The sulfur amount is very low and wines are not filtered.
