Raphaël and Vincent Bérêche are part of the Champagne rising stars. They joined their father Jean in the family estate in 2004 and since then they put tremendous efforts to constantly increase the quality of their work and wines. Since 2013 the estate became NM (négociant manipulant) in order to increase the production of the Brut Réserve. Grapes are selected from three trusted winemakers and used exclusively for the Brut Réserve. The rest of the range remains estate grown. The estate’s vineyard is planted with roughly equal part of the three varieties. The vines are farmed in "lutte raissonée" and they stopped using herbicides in 2004. Parcels are vinified separately and fermentation occurs on indigenous yeasts with around 75% of the wine fermented in barrels. An increasing amount of the wine (around one quarter) is going through a secondary fermentation under cork. No malolactic fermentation. Wines are bottled around May. No filtration is operated but a natural cold settling achieved by opening the cellar’s windows for days. Disgorgement is done 100% by hand.
