The small cheese is smooth, shiny and very creamy sometimes runny. It has a nice goaty and undergrowth flavour. It is smooth on the palate and even if the goat aromas are pronounced it is balanced with its sweet vegetal flavours.
AOP in 2007, le Banon is easy to identify as it is wrapped in chestnut leaves, after having been soaked in wine brandy. This was made in order to conserve the cheese for a longer period, but also to serve as a sort of packaging.
