The tomato velouté is a gourmet and sunny recipe, where you will find with pleasure all the aromas of the tomato, simply accompanied by a little celery, a drizzle of olive oil, garlic and enhanced with a pinch of salt. This velouté can be used as a base for tomato sauce by adding only a pinch of thyme and a little oregano.
