Beige and light brown rind, the name "Gex" is engraved on the rind. Its ivory-coloured paste is streaked with many gray blue mottles. It is part of the 'sweet' blue cheeses and not very salty. Its dough is half firm to supple.
Since 1907, three generations of cheese makers, have perpetuated the values of tradition and craftsmanship. Today, Jean-Charles Arnaud, the heir to this historical heritage, keeps the precious secrets of the maturing process inherited from his ancestors. The Bleu de Gex also known as Septmoncel became AOP in 1996.
