Pronounced with a French K ka, their flagship wine K-Or is a play on words for Cahors. This biodynamic wine offers remarkable flavours and texture. Coming from an individual plot, the wine goes through a cold prefermentation followed by long maceration and aged for 18 months in concrete. The wine is smooth but dense and powerful. It offers rich plums and black berries flavours with hints of herbaceous complexity. The structure is great and the finish is long and firm.
Emmanuel Rybinski is definitely one of the most up and coming winemakers in the region. The 14 hectares vineyards is certified organic and biodynamic and located on an iron based plateau at the south of the Cahors appellation. This family business is ran with great care and dedication in order to produce world class wines. The vast majorities of the vines carries Malbec grapes although Emmanuel is farming a few white varieties and some Merlot vines.
