This is a Blanc de Blancs Grand Cru. Three years have been assembled: 2011 (50%), 2010 (30%) and 2009 (20%). Vinification is 50% wooden oak and 50% stainless steel tanks. Must of Cuvee only and partial malolactic fermentation (20%). Aged in barrels for 84 months. Revolution is a rich Blanc de Blancs, with high acidity. Notes of yeast, green apples and citrus balance the high acidity to give it structure. Scents of white flowers and brioche on the nose.
The Doyard family can be rooted in Champagne back in the 17th century. Yannick Doyard takes over in 1979 and brings the domaine on the front scene of independent small growers. The vineyard is about 10 hectares of vines in Vertus and the Grand Cru villages of Le Mesnil, Cramant, Oger, Avize and Ay.
