Grapes are de-stemmed and pre-fermented for 4 to 6 days. Then indigenous yeast alcoholic fermentation in stainless steel tanks for up to 20 days. Ageing in 40% new oak barrel for 16 months. Dark purple robe with a strong fragrance of griottes cherries (liquor). Light spices on the palate, round and textured tannins. Good length and finish in mouth.
Jerome owns 4 hectares including 2 hectares of Grand Cru spread across Clos de la Roche, Clos Saint Denis, Charmes-Chambertin and Clos de Vougeot. In parallel, Jer?me is running a high quality negoce business covering 3 hectares and increasing the range of wines. The vines are farmed according to biodynamic principles although the vineyard is not certified. Jer?me never used herbicides or pesticides and plows the soil. He believes in full ripeness and often harvest late in order to reach the perfect moment.
