Fruity aromas and creaminess characterise this cheese. The paste is golden in colour and has a creamy texture in the mouth. The typical taste of this cheese will not be too strong but will sometimes carry some pineapple flavours.
AOP since 1996, the Beaufort Chalet d?Alpage is made by traditional farmers. They produce the cheese in summer at a minimum altitude of 1,500m and with the milk of a single flock. The particular shape of the cheese facilitates its transportation from the mountain to the valley.
