Comte is a raw cow's milk, pressed and cooked cheese. The wheel weigh between 35 to 40 kg and measure between 40 to 70 cm in diameter and 10cm in height. Made in Jura, the cheese was at the beginning created to keep the milk longer during winter and feed the families.
The 40-48 months comte is more intense and stronger than the youngest ones. It has some amino acid cristals in the paste that give a crunchy texture to the cheese. Caramelly, a bit roasted and nutty, the comte have a lot of complexed aromas that design it as the king of the cheeses.
