With its slightly orange rind and its creamy dough right under, and the friable and firm white paste in heart, the Langres exposes an intense and typical odour. On the palate, the aromas are really pleasant, not strong but a bit lactic. The melting texture increases its milky taste.
AOP since 1996, this cheese exists in two formats. It is easily recognisable by its particular shape and colour: it has a bowl at the top because the cheese drips since it is never flipped during the maturation process. Today, the farmers continue to pursue the tradition of this particular manufacture.
