La fromagerie artisanale de Ris, recovered by Patrick Gevolde in 2000, exists since the 50’s. After 25 years working for other companies, he decided to set up his own and started producing Ewe milk cheeses. Only in 2015 did he decide to produce ewe milk cheeses such as the Lavort. Created in 1968, this ewe’s milk cheese, with a grey rind and a mellow paste, originally got its round shape because of the use of cannon balls as old molds. This semi hard pressed cheese is sweet, has light pineapple aromas and has slight ewe notes.Raw Milk,
