Exclusively made with some ewe's milk cheese in the Mancha region in Spain, the manchego has a dry texture and a beige paste. The taste is fruity and sometimes a bit sharp ,it give all the typicity of the terroir.
The manchego is a semi hard cheese made with ewe' s milk from Spain in La Mancha area. It weight around 4 kg and it refines between 60 days to 2 years. The one we suggest in our sho is 12 months old and still have a supple paste and light and fruity taste.
