The rind of this cheese is quite irregular, fluffy and sometimes grey, the paste is ivory to yellow and can sometimes have some small round holes due to fermentation. Supple and creamy with its typical heart smell, the dough is milky, herbaceous and has a slight fresh hazelnut flavor.
