This speciality is inspired by the traditional way of cooking pate. Prior to cooking, the meat is rolled in dough and baked in it. Centuries ago this dough was not comestible but it preserved the meat while being baked, keeping it moist. It also facilitated transportation. The pate is wrapped in a shortcrust pastry, with a layer of jelly on the top.
