This ash cheese with a pleated rind has 2 different textures : a bit creamy in the border and chalky in the center of the cheese. The taste is goatty and fresh, a bit nutty with some underwood notes really pleasant in the mouth. You can match the cheese with the fig jam from la Cours d'Orgeres.
Le trefle du perche is a goat's cheese made in the Perche region (Orne, Eure et Loire, Loir et Cher, Sarthe). It has a natural and pleated rind sprikle with ash.The paste is white nd chalky. The weigh is around 180g. It take its name from the mold shape the maker use to produce the cheese.
